The older man replied, "Second-cut meat, which is the hind leg. Some people aren't as particular and just use any meat with a good balance of fat and lean for twice-cooked pork."

He helped pick out a piece of the second-cut meat and said, "This piece is quite good."

"Young man, how much meat do you need?"
